Sweet Potato & Caramelized Onion Flatbread

It’s officially fall and I am excited to share some of my favourite fashion trends and things to do with the family in the weeks to come. Additionally, I have a list of flavourful recipes that I have improvised to play into the season, and this weeks’ edition is a delicious appetizer to eat alone or share while entertaining guests-a sweet potato and caramelized onion flatbread. Sweet potato is a relatively unconventional topping but it pairs perfectly with the sweetness of caramelized onion and provides an element of nutrition to the savoury dish!

Prep Time 1 hour

Cook Time 10 minutes

  • Two store bought focaccia bread. I love this focaccia from COBS Bakery.
  • 2 large sweet onions peeled , cut in half and sliced thinly
  • 2 tablespoons unsalted butter
  • Kosher salt
  • 1 15-ounce container of ricotta cheese
  • 1 small sweet potato
  • 3 ounces feta cheese
  • 20 small basil leaves
  • 1 tablespoon olive oil
  • sea salt
  • Nonna Pia’s balsamic reduction to drizzle overtop

HOW TO COOK:

  1. Melt butter over medium heat and add onions to a large skillet. Stir gently and add Kosher salt. Stir onions every 5-10 minutes until they begin to darken. The longer they cook the more they caramelize, so don’t rush this important ingredient! 45 minutes to an hour on lower heat should do it. Cover and set aside.
  2. Preheat oven to 450 degrees F
  3. Peel one large sweet potato with a standard vegetable peeler and then create ribbons to top your flatbread. Put aside.

Take your focaccia bread and slice into individual long pieces

To make individual flatbreads: Mix ricotta cheese with olive oil in a mixing bowl and add 5 chopped basil leaves.

Layer individual focaccia pieces with the ricotta mixture and top with ribbons of sweet potato, crumbled feta and remaining basil leaves.

Spread caramelized onion over individual pieces and drizzle with balsamic reduction.  Bake for 5-10 minutes or until everything has slightly browned.

Remove from oven, drizzle with more balsamic, serve warm and enjoy!
